Hehe has got those who love dumplings an easy recipe:

SHRIMP DUMPLING HAR GOW  

 

1/2 lb ground pork
1/2 cup water chestnuts
1/2 cup raw shrimp
2 cloves fresh garlic
1/4 cup black mushrooms
1/4 cup chopped scallions
1/4 teaspoon salt
1/2 teaspoon peanut oil
1 tablespoon cornstarch
20 sheets small wonton wrappers (approximately)

 

This recipe is an adaptation from a Dim Sum dish made popular by the Charlie Wong Restaurant in New Bedford, Massachusetts. It can be prepared in a traditional bamboo steamer or use a pasta or pressure cooker insert for steaming.

To make the filling, combine and chop all ingredients (except wrappers) finely and combine well.

Trim the corners slightly of the wonton wrappers, if desired. Note: The larger wonton wrappers may be used if you have them on hand; simply cut into quarters before using.

Spoon 1-2 tablespoons of the filling into the center of each square and pinch evenly until they are about 1 inch round by 1 1/2 inches high.

Pour the sesame oil into a heatproof dish or steaming insert and steam the dumplings for 20 minutes.

Serve the dumplings while still hot with soy sauce (light or dark) as an accompaniment. Sweet and sour sauce also goes along well for dipping.

4 eggs (I usually double the recipe so there's enough!)

1 - 1.5 cups of flour

3/4  - 1 cup of milk

Pinch of salt

 

Beat eggs first.  Stir in the flour slowly. Add the milk which will thin out the batter. Lastly sprinkle on the salt.  This was is best so that the batter is not lumpy.

Ladle onto a reasonably hot pan and keep as thin as possible.  Turn over when ready to borwn the other side. Allow pancake to cool and then roll.

 

I usually put three rolls on a plate. Spread a little butter on them and pour over some maple syrup (a dash of lemon is also lovely, if you have one)  ENJOY!

The Best chocolate icing in the world has two ingredients

a kingsize block of plain cadbury chocolate and a 250g tub of lite cream cheese arghhh heaven on a cake all you need to do is melt the chocolate and add cream cheese until the consistency is GOOEY be sure to taste as you add the cream cheese so that its not too strong!! yummy! actually you might need another tub of lite cream cheese just in case!! the more the chocolate the harder the texture so yeah . NOTE: It has to be LITE cream cheese the normal one is too hard to whip and doest taste the same lol

                                             Make Over 120 cookies for just $4.00

This fantastic basic cookie recipe is terrific value, makes loads and has lots of room for variations:

500g margarine

1 tin condensed milk

1 cup sugar

5 cups self-raising flour

Cream sugar and margarine. Add condensed milk and flour. Roll into teaspoon sized balls and press down with a fork. Place on greased trays and bake in moderate oven until golden brown (approximately 10-15 minutes).

Before baking I divide the mixture into five and add the following ingredients for different flavoured cookies:

1.Chocolate chips and glace cherries (chopped)

2.Cornflakes and sultanas

3.Hundreds and Thousands

4.Jam drops

5.Milo and coconut

You could add any number of other things like Rice Bubbles, Smarties, nuts, cinnamon and other spices and so on. The raw mixture can be frozen in balls, just thaw slightly before baking.

From this one batch we made 123 cookies and by my calculations using the cheapest possible ingredients the whole batch cost just over $4.00 to make!

 

WW is a regular 'Suzie-homemaker' and loves baking. She owns the BEST chocolate chippie biscuit recipe in the world. The secret ingredient is........a tablespoon of golden syrup.  And everyone should read Jill Dupleix's cook books. The woman is a genius!

 

catatonic-chataholic: A particular self-sauce chocolate pudding recipe in my mother's (very old) microwave recipe book.  This recipe has seen me through job changes (the more challenging the better), hairstyle changes (oh lord, don't remind me), friend emergencies and 'I hate family' gatherings.  Is there anything better than that?! :D

 

Hikurangi: It would have to be this Chocolate Brownie recipe that I have.

150g golden canola OR butter       

1 c cocoa - mix into butter

4 eggs - beat one at a time into cocoa/butter

2 cups of sugar, dash of vanilla - beat into mixture

3/4 c of flour and 1 tsp baking power - mix in

1 pkt dark choc chips - mix in

Bake at 160 C (300F) for 40 minutes until still wobbly.  Leave in tin until cool.  Lightly sprinkle with icing sugar.

Pure Bliss.

 

Little Lady: A favourite recipe that was shared to me by my mum-in-law or Oma: Dutch 'Kerstkrans'

Almond paste for the filling:

1 egg, 1 tsp almond essense, 150 castor sugar, 240 ground almonds, grated lemon rind.

*Beat egg with fork and blend in remaining ingredients.  Store for at least 4 weeks in a covered container in the fridge. (The paste will improve with time.)

*Method - Form the almond filling into a roll about 37 cm long. Roll 1 pkt flaky puff pastry to a rectangle 40cm by 38cm.  Trim the edges.  Place the filling on the pastry.  Brush the edge of the pastry with water and form into a roll keeping the double thickness of pastry underneath.  Shape into a ring, overlapping the pastry at the four joins.  Place on ungreased baking tray and bake at 220 deg C for 15 to 20 mininutes, or until pastry is golden.  Decorate with icing and crystallised fruits.  Oma says that this recipe is good to put on the dinner table on New Year's Day. Leker.

 

Jo's What the!: My favourite food in the world is your basic egg! Fried, scrambled, poached or boiled but my favouritest way of eating them is in an omlete with ham, tomato and cheese topping (or chicken or tuna crikey the list goes on and on!) - I could eat them all day, everyday but then I'd get a growling for not eating properly ... big sighs!
